The roasted rack of Lamb with ratatouille with thyme Jus is another favourite – the lamb is drizzled with a sweet thyme sauce and served with ratatouille, a home-style vegetable stew of leek, eggplant, tomatoes, red and green peppers. Just as good is the seared black cod served with mashed potatoes and Provencal vegetables.
